A Year in the Shadows: The Union of Porter and Homemade Mead
The brewing kettle cooled, but this was no ordinary brewing day. We embarked on a journey that blurs the lines between two ancient traditions. Today, we laid down Morrigan's Shadow , a robust Porter enriched with our own handcrafted mead (14% ABV) .
In mythology, the Morrigan is the goddess of transformation. By blending a roasted Porter with the powerful, floral complexity of our honey wine, we have created a truly unique Braggot. With a final alcohol content estimated at 8.7% , it is a drink of immense depth.
Maturation: Because we used our own 14% ABV mead, time is our most precious ingredient. High-alcohol honey fermentations are like fine spirits: they need silence and darkness to reach perfection. Morrigan's Shadow will now age for a full year in our cellar.
During this year:
The Integration: The dark chocolate notes of the porter will merge with the vinous character of the mead.
The Evolution: The mead base will mellow, losing its youthful "fire" to gain notes of dried fruit and spices.
The Transformation: What begins as two separate drinks will awaken in 2027 as a single, velvety masterpiece.
